"The city stop of Lanna Cuisine"
Lanna cuisine was shaped not by fixed recipes, but through centuries of exchange along the trade routes of the Upper Mekong. Dishes like khao soi traveled through the ancient Tea Horse Road, connecting cultures, ingredients, and communities across the region.
In the past, travel between cities was dangerous and difficult. Caravan traders, known as wua tang and ma tang, became the vital link connecting Lanna with regions across the Upper Mekong, transporting not only goods, but also cultures and culinary traditions.
- WIANG Khao Soi & Grill Bar
Preserving Essence Through Minimal Change
Derived from the Northern Thai word for “city,” WIANG represents a meeting place where history, culture, and contemporary gastronomy converge. The restaurant explores the cultural influences that shaped khao soi through centuries of exchange along ancient trade routes connecting Yunnan, the Shan States, Lanna, India, and the Islamic world.
At the heart of the experience is Five Eras of Khao Soi, a signature tasting journey that traces the dish’s evolution through five defining chapters, reimagined through Chef Kong’s contemporary Lanna approach
- Wine Bar
To Night Wine Bar
Beyond Khao Soi, WIANG transforms into a Khaosoi & Grill Bar during dinner service, where Northern Thai flavors meet open-fire cooking and an extensive wine selection. The menu features charcoal-grilled specialties alongside seasonal dishes designed for sharing, while wines have been carefully selected in collaboration with the restaurant’s sommelier to complement the complexity of Northern Thai spices and regional ingredients.
Among the signature pairings is Meat Masala, served alongside grilled lamb or slow-braised beef shank, demonstrating how wine can enhance and elevate the layered flavors of Northern Thai cuisine. Rather than following traditional pairing rules, WIANG embraces a modern approach that celebrates balance, texture, and aromatic complexity.
